My Lemon Drizzle Cake
Preheat oven to 160C (325F).
Grease and flour a 9in round deep fill cake tin.
Weigh 4 large eggs.
Whatever they weigh, weigh out the same amount of plain flour, marge and caster sugar (usually about 10ozs each).
Add the correct amount of baking powder to flour and sift (usually about 3 teaspoons).
Grate one lemon rind into a bowl.
Add marge and sugar and cream together until pale.
Beat in one egg at a time with two tablespoons of flour (sifted again) each time.
Add rest of flour and fold in.
Put in floured tin, smooth out to the sides and bake for about 45 minutes or until golden brown.
Use about half a small bag of icing sugar and add the juice of the lemon you grated to make the topping, adding a little water if it's too stiff.
Drizzle over the cake when cool.
Enjoy!
